Focusing on Korean-style shabu-shabu hot pot, we present a heartfelt meal featuring Hanwoo sirloin and king shrimp pancakes. The story of Haewhaok: 25 years of craftsmanship and the aesthetics of harmony. Haewhaok began with the fingertips of a craftsman who has devoted a long time to studying and pondering Korean cuisine. Over 25 years, we have deeply explored traditional Korean food, believing that a meal is only complete when good ingredients meet careful cooking methods. We do not see cooking merely as the act of making food. We believe it is a process that captures time, respects ingredients, and seeks harmony that naturally blends together. To embody that philosophy, every dish at Haewhaok is prepared with time and care. --- The heart of Haewhaok, 888 Jinkuk. The most important thing at Haewhaok is the broth. We create our 888 Jinkuk by simmering strong broth for 8 hours three times, totaling 24 hours. Using quality ingredients like beef bones, shank, brisket, and shank is a given. By repeatedly boiling and simmering over high heat, we focus on extracting deep flavors and umami from each ingredient. The broth produced this way is rich and deep, yet simultaneously boasts a clean and light taste.
